Doughnut muffin

assalamualaikum...
menu minum petang lagi...kali ni kak lyn buat resepi dari buku lama "Family Favourites muffin & cupcakes" keluaran 2007 Parragon .Lama dah tak buat..best jugak ,lembut,moist didalam walaupun kat luarnya nampak mcm keras..muffin ni masih still moist 3 hari dalam bekas bertutup pada suhu bilik..minum dengan kopi O panas..emmm nyum..nyum..

ingredients :
175 g/6 oz butter,softened,plus extra for greasing
200g/7oz caster sugar
2 large eggs,lightly beaten
375g/13 oz plain flour
3/4 tbsp baking powder
1/4 tsp bicarbonate of soda
pinch of salt
1/2 tsp freshly grated nutmeg(lyn takda ,lyn guna bumbu kuih lapis jea)
250ml/9fl oz milk

Method
  1. grease a deep 12-cup muffin pan.In a large bowl,beat the butter & sugar together until light & creamy.
  2. Add the eggs, a little at a time, beating well between additions
  3. sift the flour, baking powder, bica soda,salt and nutmeg together.
  4. Add half of the milk into the creamy mixture,gently fold the batter together before incorporating the remaining flour & milk
  5. spoon the mixture into the muffin pan,filling each hole to about 2/3 full.
  6. bake in a preheated oven,180'c for 15 - 20 minutes or until the muffin are lightly brown & firm to the touch.
  7. for the topping, mix the caster sugar & cinnamon together,while the muffin are still warm ,brush lightly with melted butter,and sprinkle over the cinnamon sugar mixture.
  8. eat warm or cold..
